American Tuna Smoked Albacore Tostada

A super simple recipe for a hot day when you can't possibly turn the stove on. Smoky albacore is paired with sweet tomato and creamy avocado for a perfect summertime meal or light lunch. Go ahead and grab a cold Mexican lager to wash this down, you earned it.

Ingredients

1 can American Tuna Smoked Albacore

1/2 red onion, halved lengthwise, then cut crosswise into half-moons

1/4 cup freshly squeezed lime juice (from about 2 limes)

2 avocados, halved, pitted, peeled.

1 Serrano Chili, thinly sliced

12 lime wedges (about 2 limes)

1 bunch of Cilantro, roughly chopped

1 cup halved cherry tomatoes

6 Store bought tostadas or tostones

Kosher salt

Directions:

1. Dice the avocado and mash with a squeeze of lime and a pinch of salt. Don't be afraid to get this really smooth.

2. Gently toss the red onion, tomato, serrano chili, and cilantro with the lime juice and a good pinch of salt.

3. Lightly fold the Smoked Tuna into the tomato/onion mixture, being careful to not mash everything.

4. Liberally apply the mashed avocado to the tostada. Top with your tuna salad mixture and finish with an extra squeeze of lime. Now is a good time for that beer.
