Mediterranean Tuna Salad

Mediterranean Tuna Salad


2 (6 oz) cans of No Salt Added American Tuna (or for added flavor, try the Garlic!)
4 boiled eggs, peeled and chopped
½ cup pitted Kalamata olives, sliced
½ red onion, thinly sliced
4 mini cucumbers, thinly sliced
1 cup cherry tomatoes, halved
¼ cup fresh dill, chopped
4 cups romaine lettuce, chopped
1 lemon, juiced
1 can (15 oz) chickpeas, drained and rinsed
Salt and pepper, to taste
Optional: extra virgin olive oil for drizzling

1) Boil the eggs until hard-boiled, approximately 10-12 minutes. Once done, peel and half them.

2) Slice the olives, red onion, mini cucumbers, cherry tomatoes, fresh dill, and romaine lettuce.

3) Drain and rinse the chickpeas.

4) In a separate bowl, mix the tuna (pro tip: do not drain!), dill, salt and pepper until combined.

5) Add the romaine lettuce to your bowl and add the remaining ingredients.

6) Enjoy!
