This is a fresh, protein-packed bowl featuring wild-caught albacore tuna, crisp pickled cucumbers, and a savory sesame dressing. Easy enough for a lunch, but substantial enough for a weeknight dinner. the whole thing comes together in the time it takes to steam the rice. This is also fabulous enough to show off to your friends for a summertime patio dinner on one of those nights when its too hot to cook!
We love to use Furikake, a savory seaweed and spice blend hat adds a great umami punch to these rice bowls. Our friends at Jacobsen Salt co. makes a fantastic one using sea salt and seaweed harvested from the Oregon Coast. You know what they say, if it grows together, it goes together!

Ingredients
For the Rice Bowls
- 2 cups cooked jasmine or sushi rice
- 2 cans American Tuna Albacore
- 2 avocado, sliced
- 4 green onions, thinly sliced
- Optional: edamame, shredded carrots, radishes, seaweed or Jacobsen's Furikake Sea Salt
For the Pickled Cucumbers
- 2 Persian cucumbers, thinly sliced
- ¼ cup rice vinegar
- 1 teaspoon sugar
- ½ teaspoon sea salt
For the Sesame Dressing
- 2 tablespoons toasted sesame oil
- 1 tablespoon soy sauce or tamari
- 1 tablespoon rice vinegar
- 1 teaspoon honey
- 1 teaspoon grated fresh ginger
- 1 teaspoon sesame seeds
Instructions

Pickle the cucumbers:
Combine cucumbers, rice vinegar, sugar, and salt in a bowl. Toss well and let sit for at least 15 minutes. -
Make the dressing:
Whisk together sesame oil, soy sauce, rice vinegar, honey, ginger, and sesame seeds until emulsified. Taste and adjust as necessary making sure it's not too sweet. -
Build the bowls:
Divide warm rice among four bowls. Top with flaked albacore tuna, avocado, pickled cucumbers, and any additional vegetables. -
Finish and serve:
Drizzle generously with sesame dressing. Garnish with green onions, sesame seeds and Jacobsens Furikake.

American Tuna Tip
Because American Tuna is raw-packed and cooked only once in the can, it retains more of its natural flavor and moisture, making it an ideal protein for rice bowls where the tuna is the star ingredient.
Serving Suggestion: Add a soft-boiled egg for a more substantial meal and a drizzle of chili crisp for some heat.
